Ingredients:
1/2 onion, chopped
1 c. rice
1 T. oil1/3 bunch cilantro
1/2 tsp. salt
2 c. water (or chicken or vegetable broth(leave out bouillon if so)
2 bouillon cubes (chicken or vegetable
1 lime, zested
Directions:
1. Brown onion and rice in oil
2. Place water/stock, bouillon, cilantro, lime zest, and salt in a blender and blend thoroughly
3. Add water mixture to rice and bring to boil
4. Reduce heat and simmer for about 20 minutes or until rice is cooked.
5. When rice is cooked, fluff with fork and squeeze a little lime juice on it until it tastes just how you want it to!

To make the burritos, I just prepare black beans, or you can just have a can of black beans, and have an assortment of toppings like: tomatoes, salsa, lettuce, guacamole, etc. and wrap it up in a tortilla. DELICIOUS!!!
