Lentil Rice Casserole

This recipe is SO easy! It is also SO easy to clean up after. This may become a regular at our house, especially when I haven't been to the store in a while. It uses things that I have on hand.

Ingredients:
3 c. vegetable broth
3/4 c. lentils, uncooked
1/2 c. brown rice, uncooked
2/3 c. chopped onion (or if you don't have any, you can use 2 T. dried onion flakes)
1 c. (14.5 oz) diced tomatoes
2-3 medium carrots, chopped
1/2 tsp. basil (or a handful of fresh basil, finely chopped)
1/4 tsp. oregano
1/4 tsp. thyme
1-2 cloves garlic
1 tsp. salt, or to taste

Directions:
Put all ingredients in a casserole dish and give it a stir. Bake covered for 1 1/2 hours at 300F.

SOOOO easy! We ate this with a delicious salad and bread. It was great because the cleanup was next to nothing!
